Serves 8
Ingredients:
- 4 passionfruit, with pulp removed
- 2 cups of pineapple juice
- The juice of 4 oranges or, enough to make 2 cups
- 2 cups of crushed ice
- ¼ cup of mint leaves and extra to serve
Method:
- Strain passionfruit pulp into a jug and reserve the seeds
- Combine pineapple, orange, passionfruit juices with mint and ice in a food processor. Blend until smooth. Stir through passionfruit seeds
- Pour into glasses and garnish with mint leaves
